BATTERED CALAMARI SANDIWCH WITH CRAB MAYONNAISE AND CHERRY TOMATOES

Ingredientes:

For the squid:

2 medium fresh squid.

½ cup of wheat flour.

1 beaten egg.

Salt and pepper to taste.

½ cup sunflower oil (for frying the battered squid).

2 tablespoons of GUAiNOS Beer Jam.

Baguette bread or a roll of sandwich bread

 

 

For the crab mayonnaise:

1 very fresh egg (white and yolk).

1 teaspoon of lime.

1 teaspoon of prepared mustard.

1 teaspoon salt.

2 turns of Chef’s Pepper mill.

½ cup Sunflower Oil.

1 tablespoon of GUAiNOS chilli flavoured Extra Virgin Olive Oil.

6 tablespoons grated Crab Surimi (or cooked and shredded crab).

 

 

For the sandwich garnish:

2 white baguette breads for sandwiches.

8 Cherry tomatoes cut in halves.

6 chopped rocket leaves for garnish.

Preparación:

For the crab mayonnaise:

  • In the glass of a hand blender, place the whole raw egg (white and yolk), lime, mustard and salt.
  • Add the sunflower oil and the of GUAiNOS chilli flavoured Extra Virgin Olive Oil. Place the arm of the mixer on top of the egg yolk at the bottom, and without moving it, holding it firmly, press the button. Lift the arm slightly from the sides so that it emulsifies completely, and the mayonnaise is formed.
  • Once it is ready, remove it and place it in a bowl. Add the chef’s pepper and the grated crab. Mix well and set aside in the fridge.

 

For the battered squid:

  • Clean and wash the squid well. To do this, remove the skin, fins and tentacles (these can be used to make a good rice dish), remove everything inside and turn them inside out to wash them thoroughly. Turn them over again and cut them into rings. Place on absorbent kitchen paper to dry them inside and out. Set aside.
  • Heat a small saucepan or deep frying pan over high heat with sunflower oil. While the oil is heating, prepare the batter for the squid.
  • Place the wheat flour in a shallow dish. In another, place the beaten egg. One by one, dredge them first in the flour, then in the beaten egg. Let the egg drain a little and dip them in flour again.
  • We cannot put the battered squid on top of each other because they will stick together. As you coat them in batter, place them in the frying pan with the hot oil.
  • The oil must be hot so that the squid are crispy and not at all oily.
  • One by one, remove them and place them on absorbent kitchen paper. Set aside.

 

The garnish for the sandwich:

  • Cut the bread in half, leaving the two halves joined on one side.
  • Open the bread without separating it and lightly toast the inside. Set aside.
  • Cut the cherry tomatoes in halves and chop the rocket leaves. Set aside.
  • The oil must be hot so that the squid are crispy and not at all oily.
  • One by one, remove them and place them on absorbent kitchen paper. Set aside.
Emplatado

Assemble the sandwich in this order:

  • Spoon a generous amount of crab salad onto the underside of the bread.
  • On top of the crab mayonnaise, place 4 cherry tomato halves and chopped rocket leaves.
  • Place the battered squid rings on top.
  • Heat the Beer Jam in the microwave for 5 seconds and stir well with a spoon.
  • Coat the squid with the Beer Jam.
  • Place the other 4 cherry tomato halves and the rest of the rocket.
  • With the help of a spatula, place the sandwich on the grill or griddle to heat the base.
  • Serve on a flat plate and decorate with cherry tomatoes.

 

Tip: The squid sandwich is served whole, not cut into two halves.
