GRILLED SQUID STUFFED WITH SERRANO HAM, HARD-BOILED EGG AND ALMONDS.

Maridaje: 

Ingredientes:

8 medium-sized clean squid (6 whole and 2 chopped).

2 finely chopped spring onions.

2 grated skinless tomatoes.

2 boiled eggs chopped in small pieces.

1 whole egg.

3 spoonfuls of GUAiNOS Organic BiO Extra Virgin Olive Oil

¾ cup of lager.

1 large spoonful of finely chopped fresh parsley.

50 g finely chopped Serrano ham.

3 tablespoons of fried almonds crushed in a mortar.

3 tablespoons of bread crumbs.

Salt and ground black pepper to taste.

6 wooden toothpicks.

2 tablespoons of GUAiNOS Beer Jam.

Preparación:

  • We place in a bowl half of the finely chopped onion and the chopped squid (we will include the fins and tentacles). Season with salt and pepper.
  • Add the parsley, the chopped eggs, the 2 tablespoons of crushed almonds, breadcrumbs, Serrano ham.
  • Beat the raw egg, add it to the bowl and stir everything well with a large spoon.
  • With a spoon, fill the squid with the mixture. The squids shrink during cooking, so do not overfill them to prevent them from breaking. Close them with toothpicks.
  • Heat 2 tablespoons of BiO Olive Oil in a frying pan over medium-high heat. When it gets hot, place the squid and roast them until golden brown on all sides. Remove from the pan and set aside.
  • In the same pan where we have roasted the squid, over medium heat, add the remaining tablespoon of BiO Olive Oil and the onion. Stir until poached.
  • Add the grated tomato, cook over medium heat until the tomato water evaporates.
  • Add the rest of the crushed fried almonds and the beer. Stir slowly and allow to cook for a few minutes.
  • Add the squid to the stew we are preparing. We cook them for about 20 minutes until the liquid is reduced.
Emplatado

  • Heat the Beer Jam in the microwave for 5 seconds.
  • Carefully remove the toothpick that closes the squid.
  • With the help of a spoon, we bathe them with the Beer Marmalade.
  • Serve with fresh lettuce salad or mashed potatoes.
