PUFF PASTRY STUFFED WITH APPLE AND RED FRUITS WITH IBERIAN PÂTÉ CROWN

Ingredientes:

1 sheet of puff pastry dough.

2 tablespoons of melted unsalted butter.

2 green apples without skin cut in thin slices.

1 pinch of salt.

½ cup diced fresh berries.

2 tablespoons whole fresh berries.

1 tablespoon sugar.

½ tablespoon lime zest.

½ teaspoon cinnamon.

1 thick slice of Iberian Pate with fat on the edge.

Preparación:

  • Remove the puff pastry dough from the refrigerator half an hour before preparation.
  • Preheat the oven to 180°C or 350°F for 15 minutes.
  • Place the thinly sliced apples and berries in a bowl. Mix gently. Sprinkle with sugar, cinnamon, lime zest and a pinch of salt. Finish mixing and set aside.
  • Roll out the dough and place it widthwise. Spread the contents of the mixture we have just prepared, leaving two centimeters at the end of the dough free in order to stick it and prevent the filling from coming out.
  • Roll up the dough, making sure we get the end of the dough underneath. Place it on a baking tray.
  • Make slight transversal cuts in the dough so it is easy to cut without breaking the puff pastry once it is baked.
  • Paint the roll with the melted butter, using a kitchen brush.
  • Bake in the oven for 30-35 minutes at 180°C or 350°F.
  • Remove the tray from the oven. Wait for it to come to room temperature.
Emplatado

  • Cut the apple and red fruit puff pastry into slices (already marked and open).
  • Place them on a serving platter, or if it is a starter, on each plate. Place the thick strips of Iberian pâté on top.
  • Garnish with a few whole berries.
  • With a spoon, cover each piece with Cava jam.
  • It is a delicious and well-rounded dish and can be accompanied with a salad of various types of lettuce.
